After graduating from high school, I gained experience in various restaurants in my hometown of Gunma and opened Luce Cafe in Isesaki in 2015. With a unique method that flexibly adjusts the quantity of dishes and types of pasta, I achieve customer satisfaction while reducing food waste. I thoroughly implement ideas that do not waste resources in the cooking process, such as utilizing 'veggie broth' that transforms skins and stems into delicious flavors. I aim to create dishes that are delicious, gentle, and connect local ingredients to the future.
